Ingredients

  • 500 g potato gnocchi
  • 200 g ham (cooked and diced)
  • 3 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 500 ml milk
  • 125 ml heavy cream
  • 2 cloves garlic (minced)
  • 80 g parmesan cheese (grated)
  • 100 g mozzarella cheese (shredded)
  • 100 g baby spinach (fresh)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp olive oil (for greasing)

Directions

Step 1

Preheat your oven to 200°C (400°F) and lightly grease a medium-sized baking dish with olive oil.

Step 2

Bring a large pot of salted water to a boil and cook the potato gnocchi for 2-3 minutes, or until they float to the surface. Drain and set aside.

Step 3

In a large saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Step 4

Stir in the flour and cook for 1-2 minutes to form a roux, whisking constantly to avoid lumps.

Step 5

Gradually add the milk and heavy cream, whisking constantly until the mixture thickens into a smooth sauce, about 3-4 minutes.

Step 6

Stir in the grated parmesan cheese until melted and smooth. Season the sauce with salt and black pepper to taste.

Step 7

Add the cooked gnocchi, diced ham, and fresh baby spinach to the sauce. Stir gently to combine.

Step 8

Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the shredded mozzarella cheese evenly on top.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

Step 10

Remove from the oven and let it rest for 5 minutes before serving. Garnish with extra parmesan if desired and serve hot.
