Ingredients

  • 400 grams tagliatelle pasta
  • 300 grams asparagus
  • 200 grams cooked ham
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 250 milliliters heavy cream
  • 50 grams grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon olive oil
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the tagliatelle according to the package instructions until al dente. Reserve 1/2 cup of pasta water, drain the pasta, and set aside.

Step 2

While the pasta is cooking, wash the asparagus and trim the woody ends. Cut the asparagus spears into 2-3 cm pieces.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the asparagus pieces and sauté for 4-5 minutes until tender but still slightly crisp. Remove from the skillet and set aside.

Step 4

In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, stirring frequently to avoid burning.

Step 5

Stir in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes, stirring occasionally, until slightly thickened.

Step 6

Add the grated Parmesan cheese to the cream sauce and stir until melted and smooth. Season with salt, black pepper, and the lemon zest.

Step 7

Cut the cooked ham into bite-sized strips and add them to the sauce. Return the sautéed asparagus to the pan as well.

Step 8

Add the cooked tagliatelle to the skillet with the sauce, tossing to coat the pasta evenly. If the sauce is too thick, stir in some of the reserved pasta water a little at a time until the desired consistency is reached.

Step 9

Taste the pasta and adjust seasoning with more salt or black pepper if necessary.

Step 10

Serve immediately, garnished with additional Parmesan cheese if desired.
