Ingredients

  • 4 pieces (6-ounce each) Halibut fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 Garlic cloves, minced
  • 0.5 cup Dry white wine
  • 1 cup Heavy cream
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Fresh thyme leaves
  • 0.25 cup Parmesan cheese, grated

Directions

Step 1

Pat the halibut fillets dry with paper towels and season both sides with salt and black pepper.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the seasoned halibut fillets and sear for 3-4 minutes per side until golden brown and just cooked through. Remove the fillets from the skillet and set aside on a plate.

Step 3

Reduce the heat to medium and add the butter to the same skillet. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
