  • 12 ounces spaghetti or linguine
  • 2 tablespoons unsalted butter

  • 1 pound medium shrimp, peeled and deveined

  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 0.5 cup heavy cream
  • 1.5 cups Gruyere cheese, shredded
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 0.5 teaspoon red pepper flakes
  • 2 tablespoons parsley, chopped
  • 0 to taste salt

Directions

Step 1

Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.

In a large skillet, heat the butter and olive oil over medium heat. Add the shrimp and season with salt and black pepper. Cook for 2-3 minutes per side, or until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.
