Ingredients

  • 500 grams fresh green beans
  • 2 tablespoons unsalted butter
  • 2 cloves garlic
  • 1 tablespoon all-purpose flour
  • 250 milliliters whole milk (or heavy cream)
  • 3 tablespoons grated Parmesan cheese
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 teaspoon olive oil
  • 0.25 teaspoons red chili flakes (optional)

Directions

Step 1

Trim the ends of the green beans and rinse them under cold water. Set aside.

Step 2

Bring a large pot of salted water to a boil. Add the green beans and blanch them for 3-4 minutes until they are tender but still crisp. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. After a few minutes, drain and set them aside.

Step 3

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Step 4

Sprinkle the flour over the garlic and butter mixture, whisking constantly to combine. Cook for about 1-2 minutes to remove the raw flour taste.

Slowly pour in the milk (or heavy cream) while whisking to prevent lumps from forming. Continue to cook and stir until the mixture thickens into a creamy sauce, about 3-4 minutes.
