Ingredients

  • 12 oz farfalle pasta
  • 1 lb asparagus
  • 2 tbsp olive oil
  • 3 units garlic cloves
  • 5 oz goat cheese
  • 1 cup heavy cream
  • 1 tsp lemon zest
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh basil leaves (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining. Set the pasta aside.

Step 2

While the pasta is cooking, wash the asparagus and trim off the woody ends. Cut the spears into 1-inch pieces.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the asparagus pieces and sauté for 4-5 minutes, or until tender-crisp. Remove the asparagus from the skillet and set aside.

Step 4

In the same skillet, add minced garlic and sauté for about 30 seconds, or until fragrant.

Step 5

Reduce the heat to low, then add the goat cheese and heavy cream to the skillet. Stir constantly until the goat cheese melts and the mixture becomes smooth and creamy.

Step 6

Add the lemon zest, salt, and black pepper to the sauce. Stir to combine.

Step 7

Add the cooked farfalle pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, gradually add the reserved pasta water, a few tablespoons at a time, until the desired consistency is reached.

Step 8

Fold in the cooked asparagus pieces gently to combine.

Step 9

Serve the pasta immediately, garnished with fresh basil leaves if desired. Enjoy your Creamy Goat Cheese and Asparagus Farfalle!
