Ingredients

  • 12 oz Pasta (fettuccine or linguine)
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 4 cloves Garlic cloves, minced
  • 8 oz Cremini mushrooms, sliced
  • 4 oz Prosciutto, thinly sliced and chopped
  • 1 cup Heavy cream
  • 1.5 cups Parmesan cheese, grated
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (optional)
  • 0.5 cups Pasta water (reserved)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the prosciutto and sauté for 2-3 minutes until crispy. Use a slotted spoon to remove the prosciutto and set it aside on a plate lined with paper towels.

Step 3

In the same skillet, add the butter. Once melted, add the minced garlic and cook for 1 minute until fragrant, stirring frequently to prevent burning.

Step 4

Add the sliced mushrooms to the skillet. Sauté for 5-7 minutes until the mushrooms are golden brown and tender, stirring occasionally.

Step 5

Reduce the heat to medium-low and pour in the heavy cream. Allow the cream to warm for 1-2 minutes while stirring.

Step 6

Gradually stir in the grated Parmesan cheese until fully melted and the sauce is smooth. Season with salt and black pepper to taste.

Add the cooked pasta to the skillet with the sauce. Toss to coat the pasta evenly. If the sauce is too thick, add a bit of the reserved pasta water, a tablespoon at a time, until your desired consistency is reached.

Step 8

Stir the crispy prosciutto back into the pasta. Taste and adjust seasoning if needed.

Serve immediately, garnished with fresh parsley if desired. Enjoy!
