Ingredients

  • 2 pounds russet potatoes
  • 4 large garlic cloves
  • 0.5 cup unsalted butter
  • 0.5 cup heavy cream
  • 0.25 cup whole milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and cut the potatoes into 1-inch cubes and place them in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil over medium-high heat.

Once boiling, reduce heat to medium-low and simmer for 20 minutes or until potatoes are fork-tender.

While the potatoes are cooking, prepare the garlic. Peel the garlic cloves and wrap them in a piece of aluminum foil. Drizzle with olive oil before sealing the foil. Roast in the preheated oven for 15-20 minutes or until the garlic is soft and golden.
