Ingredients

  • 2.5 pounds Russet potatoes
  • 1 tablespoon Salt
  • 6 tablespoons Butter
  • 0.75 cups Heavy cream
  • 0.5 cups Sour cream
  • 0.5 teaspoons Black pepper
  • 1 large Yellow onion
  • 2 tablespoons Vegetable oil
  • 0.25 teaspoons Garlic powder
  • 2 tablespoons Chives (optional, for garnish)

Directions

Step 1

Peel and cut the potatoes into evenly sized chunks, about 2 inches each. Place them in a large pot and cover with cold water.

Add 1 tablespoon of salt to the water and bring the pot to a boil over medium-high heat. Reduce to a simmer and cook until the potatoes are fork-tender, about 15-20 minutes.
