Ingredients

  • 1 cup Orzo pasta
  • 1 lb Shrimp (peeled and deveined)

  • 3 cloves Garlic (minced)
  • 1 cup Cherry tomatoes (halved)
  • 2 cups Chicken or vegetable broth
  • 0.5 cup Heavy cream
  • 0.75 cup Feta cheese (crumbled)
  • 2 cups Baby spinach
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Bring a pot of salted water to a boil and cook the orzo according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp, season with 1/4 teaspoon of salt and black pepper, and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
