Ingredients

  • 4 pieces chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic cloves, minced
  • 1 tablespoon curry powder
  • 0.5 teaspoon ground turmeric
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 4 servings white rice or naan (for serving)

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium and add the butter to the skillet. Once melted, add the diced onion and cook for 3-4 minutes until translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
