Ingredients

  • 4 cups fresh spinach, chopped
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 0.5 cup mayonnaise
  • 0.5 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves minced garlic
  • 1 cup water chestnuts, chopped
  • 0.5 cup crumbled bacon (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, warm the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 3

Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and set aside to cool slightly.

Step 4

In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, grated Parmesan cheese, and shredded mozzarella cheese. Mix until smooth and creamy.

Step 5

Fold in the cooked spinach, chopped water chestnuts, salt, and black pepper. If using bacon for added flavor, fold that in as well.

Step 6

Transfer the mixture to a baking dish or oven-safe skillet, spreading it out evenly.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the dip is hot and bubbly around the edges.

Step 8

Remove from the oven and allow the dip to cool slightly before serving.

Step 9

Serve the dip warm with your choice of chips, crackers, or fresh vegetables.
