Ingredients

  • 6 medium (peeled and diced) Russet potatoes
  • 1 large (diced) Yellow onion
  • 3 cloves (minced) Garlic
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 4 ounces (softened and cubed) Cream cheese
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 4 slices (crispy and crumbled) Bacon
  • 2 stalks (thinly sliced) Green onions

Directions

Step 1

Peel and dice the potatoes into small, even-sized cubes. Dice the onion and mince the garlic.

Step 2

In a large crockpot, add the diced potatoes, onion, garlic, and chicken broth. Sprinkle in the salt and black pepper.

Cover the crockpot with its lid and cook on low for 6-7 hours (or on high for 3-4 hours), until the potatoes are tender and can be easily mashed with a fork.
