  • 800 grams courgettes (zucchini)
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 large garlic cloves
  • 1 liter vegetable broth
  • 1 medium potato
  • 5 grams fresh mint leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 milliliters double cream

Directions

Step 1

Wash and chop the courgettes into thin slices.

Step 2

Peel and finely chop the onion.

Step 3

Peel and dice the potato into small cubes.

Step 4

Finely chop the garlic cloves.

Step 5

Heat the olive oil in a large pot over medium heat.

Step 6

Add the chopped onion and garlic to the pot, cooking until the onion becomes translucent, about 5 minutes.

Add the sliced courgettes and diced potato to the pot. Cook for an additional 5 minutes, stirring occasionally.
