Ingredients

  • 4 pieces chicken breasts (boneless, skinless)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 0.5 cup all-purpose flour
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 3 pieces garlic cloves (minced)
  • 1 medium yellow onion (chopped)
  • 1 teaspoon thyme (fresh, finely chopped)
  • 2 tablespoons parsley (fresh, chopped for garnish)

Directions

Step 1

Season the chicken breasts with salt, black pepper, and paprika on both sides.

Step 2

Dredge the seasoned chicken in flour, shaking off any excess.

Step 3

Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.

Step 4

Sear the chicken breasts for about 4 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, add 1 tablespoon of butter and sauté the chopped onion until translucent, about 3 minutes.

Step 6

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 7

Pour in the chicken broth and use a wooden spoon to scrape any browned bits from the bottom of the skillet. Let the broth simmer for 5 minutes.

Step 8

Lower the heat to medium and stir in the heavy cream and chopped thyme. Mix well to combine.

Step 9

Return the seared chicken breasts to the skillet, making sure they are submerged in the creamy sauce.

Step 10

Cover the skillet and let the chicken cook for 15 minutes, or until the internal temperature reaches 165°F (74°C).

Step 11

Taste the sauce and adjust seasoning with additional salt and pepper if needed.

Step 12

Garnish with fresh parsley and serve hot over mashed potatoes, rice, or with crusty bread.
