Ingredients

  • 4 cups Russet potatoes (peeled and diced)
  • 2 cups Ham (diced)
  • 2 cups Frozen corn kernels
  • 4 cups Chicken broth
  • 1 large Yellow onion (finely diced)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Thyme (dried)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cups Heavy cream
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Butter
  • 0.5 cups Cheddar cheese (shredded, optional for garnish)
  • 2 tablespoons Green onions (sliced, optional for garnish)

Directions

Step 1

Prepare the ingredients: Peel and dice the potatoes, dice the ham, and finely chop the onion.

Step 2

In a 6-quart Crock Pot, add the potatoes, diced ham, frozen corn, chicken broth, chopped onion, minced garlic, thyme, salt, and black pepper. Stir gently to combine.

Step 3

Cover the Crock Pot with the lid and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are tender and the flavors are well combined.

Step 4

About 30 minutes before serving, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly.

Step 5

Slowly add the heavy cream to the butter-flour mixture while whisking continuously to avoid lumps. Cook until the mixture thickens slightly, about 2-3 minutes.

Step 6

Stir the thickened cream mixture into the Crock Pot. Mix thoroughly to combine with the chowder base.

Step 7

If desired, use a potato masher to mash some of the potatoes directly in the Crock Pot to create a thicker consistency.

Step 8

Cook for an additional 20-30 minutes on LOW to allow the flavors to meld and the soup to thicken further.

Step 9

Taste the chowder and adjust seasonings with additional salt or pepper, if needed.

Step 10

Serve hot, garnished with shredded cheddar cheese and sliced green onions, if desired.
