Ingredients

  • 8 slices bacon
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cups heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons ground paprika
  • 3 cups canned corn, drained
  • 1.5 cups shredded sharp cheddar cheese
  • 0.5 cups panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.

Step 2

Cook the bacon slices in a large skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain and crumble. Reserve 1 tablespoon of bacon grease in the skillet.

Step 3

In the same skillet, melt the unsalted butter with the reserved bacon grease over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute.

Step 4

Sprinkle the flour over the onion and garlic mixture and whisk constantly for about 1-2 minutes to cook out the raw flour taste.

Step 5

Gradually pour in the whole milk and heavy cream while whisking to create a smooth sauce. Simmer for 2-3 minutes until it thickens.

Step 6

Season the sauce with salt, black pepper, and paprika. Stir in the drained corn and 1 cup of the shredded cheddar cheese until fully combined.

Step 7

Pour the corn mixture into the prepared baking dish. Sprinkle the remaining 0.5 cup of shredded cheddar cheese evenly over the top.

Step 8

In a small bowl, combine the panko breadcrumbs with the crumbled bacon. Sprinkle this mixture evenly over the cheese layer.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and the top is golden brown.

Step 10

Remove from the oven and let the dish cool for 5 minutes. Garnish with fresh parsley before serving. Enjoy!
