  • 1 large (shredded) Carrot
  • 1 cup (chopped) Fresh cilantro
  • 1 cup Mayonnaise
  • 0.5 cup Sour cream
  • 1 (minced) Chipotle pepper in adobo sauce
  • 2 teaspoons Adobo sauce
  • 2 tablespoons (freshly squeezed) Lime juice
  • 1 teaspoon Honey

  • 0.25 teaspoon (freshly ground, or to taste) Black pepper

Directions

Step 1

In a large mixing bowl, combine the shredded green cabbage, red cabbage, carrot, and chopped cilantro. Toss to mix evenly.

Step 2

In a separate medium bowl, prepare the creamy chipotle dressing. Combine the mayonnaise, sour cream, minced chipotle pepper, adobo sauce, lime juice, honey, ground cumin, salt, and black pepper. Whisk until smooth and well blended.

Before serving, give the slaw a final toss and adjust seasoning with additional salt or lime juice if needed.

Step 7

Serve chilled as a side dish or as a topping for tacos, sandwiches, or burgers.
