Ingredients

  • 2 pieces chicken breasts
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 1 piece red bell pepper, julienned
  • 1 piece yellow bell pepper, julienned
  • 1 piece red onion, sliced
  • 0.25 cup tequila
  • 1.5 cups heavy cream
  • 0.5 cup chicken broth
  • 2 tablespoons lime juice
  • 1 piece jalapeño, finely chopped (optional)
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 ounces penne pasta
  • 0.25 cup fresh cilantro, chopped
  • 0.5 cup grated Parmesan cheese

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

While the pasta cooks, slice the chicken breasts into thin strips.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken, season with half of the salt, black pepper, cumin, and chili powder, and cook for 5-7 minutes until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set aside.
