  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 leaf bay leaf
  • 1 cup heavy cream
  • 0.25 cup, chopped fresh parsley

  • 0 to taste black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat.

Step 2

Season the chicken breasts with salt and pepper, then add them to the pot. Cook for about 5-7 minutes per side until they are golden brown and cooked through. Remove the chicken and set aside to cool.

In the same pot, add 3 tablespoons of butter. Once melted, add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are tender.
