Ingredients

  • 500 grams boneless, skinless chicken thighs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic cloves, minced
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 0.75 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken thighs and sear for 3–4 minutes per side, until golden brown. Remove the chicken from the pan and set aside.

Step 3

Reduce the heat to medium and add the butter to the same pan. Once melted, add the diced onion and cook for 4–5 minutes until softened.

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
