Ingredients

  • 12 oz Penne pasta
  • 2 pieces Boneless, skinless chicken breasts
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 3 cloves Garlic, minced
  • 1.5 cups Heavy cream
  • 0.5 cup Pesto sauce
  • 0.5 cup Grated Parmesan cheese
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Fresh basil leaves, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Step 2

While the pasta cooks, season the chicken breasts with salt and black pepper on both sides.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for 5-7 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest for 5 minutes, then slice into bite-sized pieces.

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic for 1-2 minutes until fragrant, being careful not to burn it.
