Ingredients

  • 500 grams Chicken thighs (boneless, skinless) or shelled prawns
  • 2 tablespoons Vegetable oil
  • 1 large Onion, finely chopped
  • 4 cloves Garlic cloves, minced
  • 1 tablespoon Ginger, grated
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Ground coriander
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Chili powder (adjust to taste)
  • 400 grams Canned tomatoes, pureed
  • 400 milliliters Coconut milk
  • 2 tablespoons Fresh cilantro, chopped
  • 1 teaspoon Salt
  • 1 teaspoon Sugar (optional)

Directions

Step 1

Heat the vegetable oil in a large pan over medium heat.

Step 2

Add the cumin seeds and let them sizzle for 30 seconds until they release their aroma.

Step 3

Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.

Step 4

Stir in the minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.

Step 5

Add the turmeric powder, ground coriander, garam masala, and chili powder. Stir for 30 seconds to toast the spices.

Step 6

Pour in the pureed tomatoes and cook, stirring occasionally, for 5 minutes until the oil begins to separate from the mixture.

Step 7

Add the chicken or prawns to the pan, coating them well in the spice mixture.

Step 8

Pour in the coconut milk, stirring to create a creamy sauce.

Step 9

Season with salt and add sugar if you'd like a slight sweetness to the curry.

Step 10

Reduce the heat to low and simmer until the chicken is cooked through (15-20 minutes) or the prawns turn pink and opaque (5-7 minutes).

Step 11

Taste and adjust seasoning as needed.

Step 12

Garnish with freshly chopped cilantro before serving.

Step 13

Serve hot with steamed rice or naan bread for a complete meal.
