Ingredients

  • 4 pieces Boneless, skinless chicken thighs or pork chops
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 medium Bell peppers (red, yellow, or green), sliced
  • 8 ounces Button mushrooms, sliced
  • 14.5 ounces Diced tomatoes (canned)
  • 2 tablespoons Tomato paste
  • 1 cup Chicken or vegetable broth
  • 0.5 cup Dry white wine (optional)
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Crushed red pepper flakes (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Heavy cream
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)
  • 4 servings Cooked pasta, rice, or mashed potatoes (for serving)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs or pork chops for about 2-3 minutes per side, until lightly browned. Transfer to the Crock Pot.

Step 2

In the same skillet, sauté the diced onion for 2-3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds. Transfer to the Crock Pot.

Step 3

Add the sliced bell peppers, mushrooms, diced tomatoes, tomato paste, chicken or vegetable broth, and white wine (if using) to the Crock Pot.

Step 4

Stir in the Italian seasoning, crushed red pepper flakes (if desired), salt, and black pepper.

Step 5

Cover the Crock Pot and cook on low heat for 5-6 hours, or on high heat for 3-4 hours, until the chicken or pork is tender and cooked through.

Step 6

Thirty minutes before serving, stir in the heavy cream to create the creamy sauce. Allow it to heat through.

Step 7

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 8

Serve the creamy cacciatore over cooked pasta, rice, or mashed potatoes. Garnish with chopped fresh parsley, if desired.
