Ingredients

  • 12 oz fettuccine pasta
  • 2 pieces boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 pieces garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package instructions until al dente, then drain and set aside.

Step 2

Pat the chicken breasts dry with paper towels. Season both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for 6-8 minutes on each side, or until fully cooked and golden brown. Remove from the skillet, let rest for 5 minutes, then slice into thin strips.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Once melted, add the minced garlic and sauté for 1 minute until fragrant.

Sprinkle the flour over the garlic and whisk to combine, cooking for 1 minute to remove the raw flour taste.
