Ingredients

  • 2 pieces (boneless, skinless) Chicken breast
  • 1 bunch (trimmed and cut into 1-inch pieces) Asparagus
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 3 cloves (minced) Garlic
  • 1 medium (diced) Yellow onion
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons (chopped, optional for garnish) Fresh parsley

Directions

Step 1

Season the chicken breasts with a pinch of salt and pepper on both sides.

Step 2

In a large pot over medium heat, add the olive oil and 1 tablespoon of butter. Once the butter melts, add the chicken breasts and sear for 4-5 minutes per side until golden brown. Remove the chicken from the pot and set aside.

In the same pot, add the remaining tablespoon of butter. Add the diced onion and cook for 3-4 minutes until soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
