Ingredients

  • 1 piece chicken breast
  • 125 grams fettuccine pasta
  • 100 grams baby spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 125 milliliters heavy cream
  • 50 grams Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes
  • 1 teaspoon lemon juice

Directions

Step 1

Bring a pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Reserve a cup of pasta water, then drain and set the pasta aside.

Step 2

While the pasta is cooking, season the chicken breast with salt and black pepper on both sides.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breast and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest on a cutting board.

In the same skillet, reduce the heat to medium and add 1 tablespoon of olive oil. Add the minced garlic and cook for about 30 seconds until fragrant.
