Season the chicken breasts on both sides with salt and pepper.
Heat 1 tablespoon of olive oil in a large, deep skillet over medium-high heat.
Sear the chicken breasts on each side for 4-5 minutes until golden brown. Remove them from the skillet and set aside.
In the same skillet, lower the heat to medium and add the remaining 1 tablespoon of olive oil.
Add the chopped onion and sauté for 3-4 minutes until soft and translucent.
Stir in the minced garlic and cook for 1 minute until fragrant.

Cook for 3-5 more minutes until the chicken is heated through.
