  • 1.5 cups heavy cream
  • 0.75 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 4 quarts water (for boiling pasta)
  • 1 tablespoon salt (for boiling pasta)

Directions

Step 1

Bring a large pot of water to a boil and add 1 tablespoon of salt. Cook the fettuccini according to package instructions until al dente, then drain and set aside. Reserve 1 cup of pasta water.

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Add the chicken to the skillet and cook for 4-5 minutes per side, or until golden brown and fully cooked through (internal temperature of 165°F).
