Ingredients

  • 12 oz fettuccine pasta
  • 2 pieces chicken breast
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 pieces garlic cloves, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook fettuccine pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

Slice chicken breasts into thin strips. Season lightly with salt and pepper on both sides.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the chicken strips and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

Step 5

Pour in the heavy cream and bring it to a gentle simmer. Stir occasionally and let the cream thicken slightly, about 3-4 minutes.

Step 6

Stir in the grated Parmesan cheese until it fully melts and the sauce becomes smooth and creamy.

Step 7

Season the sauce with salt and black pepper to taste.

Step 8

Add the cooked fettuccine to the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a splash of the reserved pasta water to thin it out to your desired consistency.

Step 9

Slice the cooked chicken strips and place them on top of the pasta. Toss gently to combine.

Step 10

Garnish with fresh parsley, if desired, and serve immediately.
