Ingredients

  • 2 lb Yukon Gold potatoes
  • 4 whole Garlic cloves
  • 4 tbsp Unsalted butter
  • 0.5 cup Heavy cream
  • 0.25 cup Whole milk
  • 4 oz Cream cheese
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Parmesan cheese
  • 2 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Fresh chives (optional, for garnish)

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into evenly sized chunks, approximately 1-2 inches. Place the potato chunks in a large pot and cover with cold water by about 1 inch.

Step 2

Peel the garlic cloves and add them to the pot with the potatoes for added flavor. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes until fork-tender, about 15-20 minutes.

Step 4

While the potatoes are cooking, heat the heavy cream, whole milk, and butter in a small saucepan over low heat until the butter is fully melted. Stir occasionally to combine and keep warm.

Step 5

Drain the cooked potatoes and garlic thoroughly in a colander. Allow them to sit for 1-2 minutes to let excess moisture evaporate.

Step 6

Return the potatoes and garlic to the pot and mash them using a potato masher or ricer until smooth. Avoid over-mixing, as it can result in gluey mashed potatoes.

Step 7

Add the cream cheese to the potato mixture and stir until melted and incorporated.

Step 8

Gradually pour in the warm milk and cream mixture while stirring. Mix until the potatoes reach your desired consistency. You can add less or more of the liquid depending on your preference for creaminess.

Step 9

Fold in the shredded cheddar cheese and Parmesan cheese until fully melted and combined.

Step 10

Season the mashed potatoes with the remaining 1 teaspoon of salt and the ground black pepper. Taste and adjust seasoning as needed.

Step 11

Transfer the mashed potatoes to a serving dish and garnish with chopped fresh chives if desired. Serve warm.
