Ingredients

  • 6 medium-sized russet potatoes
  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 3 cups sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup diced green chilies (canned)
  • 1.5 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 0 as needed non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with non-stick cooking spray and set it aside.

Step 2

Peel and slice the potatoes into thin rounds (about 1/8-inch thick). Place the sliced potatoes in a large pot of salted water and bring to a boil. Cook for 8-10 minutes, or until the potatoes are just fork-tender but not falling apart. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Step 4

Gradually whisk in the milk, ensuring no lumps form. Continue stirring and cooking until the mixture thickens, roughly 4-5 minutes.

Step 5

Lower the heat and stir in 2 cups of the shredded cheddar cheese, the cream cheese, sour cream, and diced green chilies. Mix until smooth and fully combined.

Step 6

Stir in the chili powder, garlic powder, onion powder, salt, and black pepper. Taste and adjust seasonings if needed. Remove the sauce from heat.

Step 7

In the prepared casserole dish, layer half of the cooked potato slices in a single layer. Pour half of the cheese sauce over the potatoes, spreading it evenly.

Step 8

Layer the remaining potato slices on top, then pour the rest of the cheese sauce over the second layer of potatoes.

Step 9

Sprinkle the remaining 1 cup of cheddar cheese and the grated parmesan cheese evenly over the top.

Step 10

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is bubbly and golden brown.

Step 11

Remove from the oven and let the casserole rest for 10 minutes before serving. Garnish with chopped fresh parsley and enjoy!
