Ingredients

  • 200 grams Gruyere cheese
  • 200 grams Emmental cheese
  • 240 ml Dry white wine
  • 1 clove Garlic
  • 15 grams Cornstarch
  • 15 ml Lemon juice
  • 15 ml Kirsch (cherry brandy)
  • 1 pinch Ground nutmeg
  • 1 pinch Ground black pepper
  • 1 loaf French bread (for dipping)
  • 500 grams Assorted vegetables (optional, for dipping)

Directions

Step 1

Grate the Gruyere and Emmental cheeses and set them aside.

Step 2

Cut the French bread into bite-sized cubes. If using vegetables, wash and cut them into small, dip-friendly pieces.

Step 3

Peel the garlic clove and rub it inside the surface of a heavy-bottomed fondue pot or a medium saucepan. Discard the garlic clove after coating the pot.

Step 4

In the garlic-coated pot, heat the dry white wine over medium heat until warm but not boiling.

Step 5

In a small bowl, combine the cornstarch with a tablespoon of water or a small amount of the wine. Stir to make a smooth paste and set aside.

Step 6

Gradually add the grated Gruyere and Emmental cheeses to the warm wine, stirring constantly in a figure-eight motion until the cheese is fully melted and smooth.

Step 7

Stir in the lemon juice and cornstarch paste, continuing to mix until the fondue thickens to the desired consistency.

Step 8

Reduce the heat to low and stir in the Kirsch, ground nutmeg, and ground black pepper for added flavor.

Step 9

Place the fondue pot over a fondue burner or low flame to keep it warm and serve immediately with bread cubes and optional vegetables for dipping.
