Ingredients

  • 12 ounces Penne pasta
  • 2 tablespoons Olive oil
  • 3 pieces Garlic cloves, minced
  • 1 large Bell pepper, chopped
  • 1 medium Zucchini, chopped
  • 2 cups Broccoli florets
  • 1 cup Cherry tomatoes, halved
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, shredded
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh basil leaves, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.

Step 3

Add the chopped bell pepper, zucchini, and broccoli florets to the skillet. Sauté for about 5-7 minutes, until the vegetables are tender but still crisp.

Step 4

Stir in the halved cherry tomatoes and cook for an additional 2 minutes.

Step 5

Reduce the heat to low and pour in the heavy cream. Stir until well combined and heated through, about 2 minutes.

Step 6

Gradually add the Parmesan and mozzarella cheese, stirring constantly until the cheese is melted and the sauce is smooth.

Step 7

Season the sauce with salt and black pepper to taste.

Step 8

Add the cooked penne pasta to the skillet and toss to coat the pasta evenly with the sauce and vegetables.

Step 9

Sprinkle the chopped fresh basil over the pasta, mix well, and serve immediately.
