Ingredients

  • 400 grams Sharp cheddar cheese
  • 200 grams Gruyère cheese
  • 2 tablespoons Cornstarch
  • 1 cup Dry white wine
  • 1 clove Garlic clove
  • 1 tablespoon Fresh lemon juice
  • 0.5 teaspoons Ground mustard
  • 0.25 teaspoons Ground white pepper
  • 1 pinch Optional: Nutmeg
  • 1 assortment Items for dipping (bread cubes, veggies, fruits, etc.)

Directions

Step 1

Grate both the cheddar and Gruyère cheeses. Toss them with the cornstarch to prevent clumping and set aside.

Step 2

Cut the garlic clove in half and rub the inside of your fondue pot (or a heavy-bottomed saucepan) with the cut sides of the garlic to infuse flavor. Discard the garlic afterward.

Pour the white wine into the pot and warm it over medium-low heat. Do not boil; you just want it to be hot.

Add the lemon juice to the warmed wine and stir gently.

Gradually add the cheese mixture to the pot, one handful at a time, stirring continuously with a wooden spoon or whisk to ensure a smooth texture. Wait until each handful is melted before adding the next.
