Ingredients

  • 4 cups Low-sodium chicken or vegetable broth
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 0.25 teaspoons Ground nutmeg (optional)
  • 0.5 cups Fat-free half-and-half
  • 2 tablespoons, chopped (optional for garnish) Fresh parsley

Directions

Step 1

Prepare the cauliflower by removing the leaves and cutting it into florets. Rinse well and set aside.

Step 2

Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes, or until softened.
