Ingredients

  • 500 grams carrots
  • 1 medium onion
  • 2 cloves garlic
  • 1 liter vegetable broth
  • 120 milliliters low-fat milk
  • 1 teaspoon olive oil
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh parsley

Directions

Step 1

Peel and chop the carrots into small chunks. Chop the onion and mince the garlic.

Step 2

Heat the olive oil in a large pot over medium heat.

Step 3

Add the onions and garlic to the pot and sauté for 2-3 minutes, until they are soft and fragrant.

Step 4

Stir in the ground cumin and cook for another 30 seconds to release its aroma.

Step 5

Add the chopped carrots and vegetable broth to the pot. Bring everything to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the carrots are completely tender.

Step 6

Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until creamy, then return it to the pot.

Step 7

Stir in the low-fat milk and season with salt and black pepper. Heat gently for 2-3 minutes, but do not let the soup boil.

Step 8

Ladle the soup into bowls and garnish with fresh parsley.

Step 9

Serve warm and enjoy this healthy, comforting dish!
