Ingredients

  • 2 medium Carrots
  • 3 stalks Scallions
  • 4 tablespoons Cream cheese
  • 2 tablespoons Sour cream
  • 1 tablespoon Butter
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Lemon juice
  • 1 tablespoon Chives (optional, for garnish)

Directions

Step 1

Peel and finely grate the carrots using a box grater or food processor.

Step 2

Slice the scallions thinly, separating the white and green parts.

Step 3

Heat the butter in a small skillet over medium heat until melted.

Step 4

Add the grated carrots and the white parts of the scallions to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the carrots are softened.

Step 5

Lower the heat to medium-low and stir in the cream cheese, sour cream, garlic powder, salt, and black pepper. Stir until the mixture is fully combined and creamy.

Step 6

Add the lemon juice and green parts of the scallions. Cook for an additional minute, then remove from heat.

Step 7

Taste and adjust seasoning if needed. If desired, stir in a little more sour cream to thin the consistency.

Step 8

Spoon the topping generously over freshly baked potatoes and garnish with chopped chives if using.

Step 9

Serve immediately and enjoy!
