  • 4 cups chicken stock
  • 2 cups coconut milk
  • 2 tablespoons lime juice
  • 3 sprigs fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 small scotch bonnet pepper, whole
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Directions

Step 1

Heat the coconut oil in a large pot over medium heat.

Add the diced chicken and cook until lightly golden on the outside, about 5 minutes. Remove the chicken and set aside.
