Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 pieces garlic cloves, minced
  • 3 cups broccoli florets
  • 1.5 cups heavy cream
  • 0.5 cups chicken broth
  • 0.75 cups parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season the chicken breasts on both sides with salt and pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the pan and set aside.

Step 3

In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and sauté for 1-2 minutes, until fragrant.

Step 4

Add the broccoli florets to the skillet and cook for 3-4 minutes, stirring occasionally, until they begin to soften.

Step 5

Pour in the chicken broth and bring to a simmer. Let the broccoli cook for another 3-4 minutes until tender but not mushy.

Step 6

Reduce the heat to low and stir in the heavy cream, grated parmesan cheese, thyme, and oregano. Simmer the mixture for 2-3 minutes, stirring constantly, until the sauce thickens slightly.

Step 7

Return the cooked chicken to the skillet, nestling it into the sauce. Spoon some sauce over the chicken to coat evenly.

Step 8

Cover the skillet and let it simmer for an additional 5-7 minutes to allow the flavors to meld and the chicken to heat through.

Step 9

Garnish the dish with fresh chopped parsley before serving.

Step 10

Serve warm over rice, mashed potatoes, or pasta for a complete meal.
