Ingredients

  • 500 grams Broccoli florets
  • 3 medium Carrots
  • 1 medium Onion
  • 2 cloves Garlic
  • 4 cups Vegetable stock
  • 0.5 cups Heavy cream
  • 2 tablespoons Olive oil
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Ground nutmeg
  • 2 tablespoons Fresh parsley
  • 1 cup Water

Directions

Step 1

Wash and prepare the vegetables: cut the broccoli into small florets, peel and slice the carrots, dice the onion, and mince the garlic.

Step 2

In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic and sauté until softened and fragrant, about 2-3 minutes.

Step 3

Add the sliced carrots and broccoli florets to the pot. Stir well to combine with the onion and garlic.

Step 4

Pour in the vegetable stock and 1 cup of water. Bring the mixture to a boil, then reduce the heat to a simmer.
