Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons tomato paste
  • 0.25 cup water
  • 0.5 cup sour cream
  • 1 tablespoon lime juice
  • 8 small tortillas (flour or corn)
  • 1 cup cheddar cheese, shredded
  • 1 cup lettuce, shredded
  • 2 medium tomatoes, diced
  • 0.25 cup cilantro, chopped

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for another minute.

Step 3

Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and fully cooked through, about 5-7 minutes.

Step 4

Stir in the chili powder, ground cumin, smoked paprika, salt, and ground black pepper. Cook for 1 minute to toast the spices.

Step 5

Add the tomato paste and water to the beef mixture, stirring until combined. Reduce the heat to low and let simmer for 5 minutes, allowing the flavors to meld.

Step 6

While the beef simmers, prepare the creamy taco sauce by mixing the sour cream and lime juice in a small bowl. Set aside.

Step 7

Warm the tortillas in a dry skillet over low heat or in the microwave wrapped in a clean towel.

Step 8

Assemble the tacos: Spoon the seasoned beef onto the warmed tortillas. Top with shredded cheddar cheese, lettuce, diced tomatoes, and chopped cilantro.

Step 9

Drizzle with the creamy sour cream–lime sauce and serve immediately.
