Ingredients

  • 2 cups Elbow macaroni
  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons Tomato paste
  • 1 14-ounce can Diced tomatoes, canned
  • 1 cup Beef broth
  • 0.5 cup Heavy cream
  • 1 cup Shredded cheddar cheese
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet or pot, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked, about 5-7 minutes. Drain any excess fat if needed.

Step 3

Push the cooked beef to one side of the skillet. Add the diced onion to the empty side and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Mix in the tomato paste and cook for 1 minute to deepen the flavor. Then add the diced tomatoes, beef broth, paprika, salt, and black pepper. Stir to combine and bring to a gentle simmer.

Step 5

Reduce the heat to low and stir in the heavy cream. Let the mixture simmer for 2-3 minutes, allowing the flavors to meld together.

Step 6

Add the cooked macaroni to the skillet and mix until well coated in the sauce.

Step 7

Gradually stir in the shredded cheddar cheese until melted and smooth.

Step 8

Taste and adjust seasoning if needed. Serve immediately, garnished with fresh parsley if desired.
