  • 0.5 cup, grated Parmesan cheese

Directions

Step 1

Rinse the pearled barley under cold water and set aside.

Step 2

In a medium saucepan, bring the vegetable broth to a gentle simmer. Keep it warm on low heat.

In a large deep skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat.
