Ingredients

  • 12 oz fettuccine pasta
  • 8 slices bacon
  • 1 tbsp olive oil
  • 3 cloves garlic
  • 1.5 cups heavy cream
  • 1 cup Parmesan cheese
  • 6 oz baby spinach
  • 0.5 tsp black pepper
  • 0.25 tsp salt

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set the pasta aside.

Step 2

While the pasta is cooking, heat a large skillet over medium heat. Add the bacon slices and cook until crispy, about 6-8 minutes. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Once cooled, chop into bite-sized pieces.

Step 3

Drain excess bacon fat from the skillet, leaving about 1 tablespoon. Add olive oil to the skillet, followed by the minced garlic. Cook for 1-2 minutes until fragrant.

Step 4

Lower the heat to medium-low and gently stir in the heavy cream. Allow the cream to heat through, but do not bring it to a boil.

Step 5

Gradually add the Parmesan cheese to the skillet, stirring constantly until the cheese is melted and the sauce becomes creamy.

Step 6

Add the baby spinach to the sauce and cook for 2-3 minutes, or until the spinach wilts.

Step 7

Season the sauce with black pepper and salt. Taste and adjust seasoning as needed.

Step 8

Add the cooked fettuccine to the skillet and toss to coat the pasta evenly in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it to your desired consistency.

Step 9

Stir in the chopped bacon, reserving a small amount for garnish if desired.

Step 10

Serve immediately, garnished with the reserved bacon bits and additional Parmesan cheese, if desired. Enjoy!
