Ingredients

  • 2 pounds Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 6 slices Bacon
  • 1 large Yellow onion
  • 1 tablespoon Olive oil
  • 2 cloves Garlic (minced)
  • 2 tablespoons Chives (optional, chopped)

Directions

Step 1

Peel and dice the potatoes into 2-inch cubes, then rinse them under cold water.

Step 2

Place the diced potatoes in a large pot and cover with cold water. Add a generous pinch of salt and bring to a boil over medium-high heat. Lower the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 3

While the potatoes are cooking, heat a large skillet over medium heat and cook the bacon slices until crispy. Remove the bacon and place it on paper towels to drain, then chop into small pieces.

Step 4

In the same skillet with the bacon drippings, add the olive oil and sliced onion. Cook over medium-low heat for 10-15 minutes, stirring occasionally, until the onions are caramelized. Add the minced garlic during the last 2 minutes of cooking and stir well. Remove from heat and set aside.
