Ingredients

  • 12 oz Pasta (fettuccine or penne)
  • 1 jar (12 oz) Marinated artichoke hearts
  • 2 tbsp Unsalted butter
  • 3 count Garlic cloves (minced)
  • 1.5 cups Heavy cream
  • 1.25 cups Asiago cheese (grated)
  • 1 tbsp Lemon juice
  • 0.25 cup Fresh parsley (chopped)
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 1 tbsp Olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and toss with 1 tablespoon of olive oil to prevent sticking. Set aside.

Step 2

Drain the marinated artichoke hearts and pat them dry with a paper towel. Roughly chop into bite-sized pieces.

Step 3

In a large skillet, melt butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Stir in the heavy cream and bring it to a gentle simmer. Cook for 3-4 minutes, stirring occasionally, until the cream thickens slightly.
