Ingredients

  • 2 pieces Puff pastry sheets
  • 2 medium Apples (e.g., Granny Smith or Honeycrisp)
  • 4 tablespoons Granulated sugar
  • 2 tablespoons Brown sugar
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Nutmeg
  • 1 tablespoon Cornstarch
  • 0.5 cup Heavy cream
  • 1 large Egg yolk
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Butter
  • 1 tablespoon Confectioners' sugar (for dusting)
  • 1 egg Egg wash (1 egg beaten with 1 tablespoon of water)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Peel, core, and dice the apples into small chunks.

Step 3

In a medium saucepan, melt the butter over medium heat. Add the diced apples, 2 tablespoons of granulated sugar, brown sugar, cinnamon, and nutmeg. Cook for 5-7 minutes until the apples are soft and caramelized.

Step 4

In a small bowl, mix the cornstarch with 1 tablespoon of water to create a slurry. Add the slurry to the apple mixture and cook for another minute until thickened. Remove from heat and set aside to cool.

Step 5

In a separate bowl, whisk together heavy cream, egg yolk, the remaining 2 tablespoons of granulated sugar, and vanilla extract to create the custard filling.

Step 6

Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into 4 equal squares.

Step 7

Place a spoonful of the cooled apple mixture and a small dollop of custard filling onto the center of each pastry square.

Step 8

Fold each square into a triangle, pressing the edges together to seal. Use a fork to crimp the edges securely.

Step 9

Lightly brush the tops of the pastries with egg wash and transfer them onto the prepared baking sheet.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the puff pastries are golden brown and puffed.

Step 11

Allow the pastries to cool for 5 minutes, then dust with confectioners' sugar before serving. Enjoy warm or at room temperature!
