  • 2 tablespoons Unsalted butter
  • 3 tablespoons Brown sugar
  • 1 teaspoon Ground cinnamon
  • 2 cups Heavy cream
  • 0.25 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 3 large Egg yolks
  • 1 tablespoon Cornstarch
  • 1 tablespoon Powdered sugar (for garnish)
  • 4 small Fresh mint leaves (optional, for garnish)

Directions

Step 1

Peel, core, and thinly slice the apples into even pieces.

Step 2

In a medium skillet, melt the butter over medium heat. Add the apple slices, brown sugar, and ground cinnamon. Cook for 5-7 minutes, stirring occasionally, until the apples become tender and caramelized. Set aside to cool slightly.

Step 3

In a medium saucepan, combine the heavy cream and granulated sugar. Heat over medium heat, stirring constantly, until the sugar has completely dissolved and the cream is warm (do not boil).

Step 4

In a small bowl, whisk together the egg yolks, vanilla extract, and cornstarch. Slowly pour about 1/4 cup of the warm cream mixture into the egg yolks, whisking constantly to temper the eggs.
