  • 2 tablespoons Olive oil
  • 4 cups Vegetable broth
  • 1 cup Unsweetened almond milk (or any milk of choice)
  • 1 teaspoon Fresh thyme
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 2 tablespoons (chopped, for garnish) Fresh parsley

Directions

Step 1

Peel the potatoes and dice them into small, even-sized pieces. Dice the onion and mince the garlic cloves.

Step 2

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes, or until softened.

Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

Add the diced potatoes, vegetable broth, and fresh thyme to the pot. Stir to combine.
